Gyokuro Mikoto Bio
The term "Gyokuro" means "precious dew" and refers to the unique cultivation and processing method that gives this tea its distinctive, umami-rich flavor. Mikoto is the ancient Japanese name for the Emperor.Tea plants intended for the production of Gyokuro are covered with nets or straw approximately 20-30 days before harvest. This process, known as "shading," reduces the amount of direct sunlight reaching the leaves, increasing chlorophyll levels and reducing those of catechins, responsible for the bitterness. Only the most tender leaves that grow in the first days of Spring are collected. The result is a Tea with a sweet and rich taste, typical of Gyokuro. True connoisseurs appreciate its emerald green needles, its cup of a fresh light green color and its sweetish and intense flavor.
